For the Marinated Tofu:
- 400 grTofu
- 2 tbspOregano
- 2Medium Onions
- 1 tbspBlack Pepper
- 1 tbspDijon Mustard
- 10 clovesGarlic
- 3 tbspVegan Mayonnaise (I used Hellmann's)
- 0.50 cupWhite Wine Vinegar
- Salt to taste
For the Rest:
- 4Large Potatoes
- 1 canBeer
- 1Large Onion

INGREDIENTS
For the Marinated Tofu:
- 400 grTofu
- 2 tbspOregano
- 2Medium Onions
- 1 tbspBlack Pepper
- 1 tbspDijon Mustard
- 10 clovesGarlic
- 3 tbspVegan Mayonnaise (I used Hellmann's)
- 0.50 cupWhite Wine Vinegar
- Salt to taste
For the Rest:
- 4Large Potatoes
- 1 canBeer
- 1Large Onion
INSTRUCTIONS
For the Marinated Tofu:
- 1Dice the onions and mince the garlic. Combine in a bowl.
- 2Add the oregano, black pepper, salt, Dijon mustard, garlic, vegan mayonnaise and white wine vinegar. Mix until smooth.
- 3Add the tofu to the marinade and stir well so all sides absorb the flavour. Marinate overnight if possible, or use immediately.
For the Rest:
- 1Place the tofu along with the marinade in the centre of a baking dish.
- 2Cut the potatoes into cubes and arrange around the tofu.
- 3Add the diced onion and beer. Toss everything well in the sauce, keeping the tofu in the centre.
- 4Bake at 200°C for 40 minutes or until the potatoes are golden.
