For the Skewers:

- 1Bell pepper (any colour, or mixed)
- 1Vegan black pudding (optional, from Fumeiro Vegano)
For the Marinade:
- 2 tbspTomato passata
- 1 tbspRed pepper paste
- 1 dessert spoonGarlic paste
- 1 dessert spoonDijon mustard
- 3 clovesGarlic, crushed
- 3 leavesBay leaves

- Beer to taste

- Garlic powder to taste

INGREDIENTS
For the Skewers:
- 200 grSmoked tofu
- 200 grNatural tofu

For the Marinade:

INSTRUCTIONS
For the Skewers:
- 1Cut the smoked and natural tofu into large cubes. Set aside.
- 2Cut the pepper into medium-sized squares. Set aside.
- 3Halve the onion, then separate the layers. If needed, cut larger pieces to match the size of the pepper pieces. Set aside.
For the Marinade:
- 1Mix all the marinade ingredients in a large bowl.
- 2Add the tofu cubes, pepper and onion to the marinade and coat well.
- 3Marinate for at least 1 hour (the longer the better, to intensify the flavours).
For Assembly and Cooking:
- 1Use metal or wooden skewers (if using wooden ones, soak them in water first to prevent burning).
- 2Alternate between smoked tofu, natural tofu, onion and pepper on each skewer.
- 3To grill, place the skewers over a fire on a grill rack. Turn frequently and brush with the marinade sauce each time you turn them for extra flavour. When the skewers are nicely golden and slightly crispy on the outside, they are ready. Remove from the grill and serve immediately, making sure the inside is juicy and perfectly cooked.
- 4If using vegan black pudding, roast it whole until golden. Once roasted, carefully remove the casing and slice into thick rounds before serving.
NOTES
- For the side, you can make carrot and pea rice, roasted or fried potatoes and a fresh salad, according to your preference.
- We haven't tested it, but it should be possible to make the skewers in the oven or on a hot griddle pan, turning them equally and brushing with the marinade sauce throughout to keep the flavour and juiciness.
