INGREDIENTS
- 2 slicesBread
- 6 slicesTomato
- 0.50Ripe avocado
- 100 grCooked chickpeas or white beans
- 50 grFresh mushrooms of your choice
- Salt to taste
- Black pepper to taste
- Oregano to taste
- Olive oil to taste
- Paprika to taste
- Lemon juice to taste
INSTRUCTIONS
- 1Toast the bread slices and set aside.
- 2Cut 6 thin tomato slices and set aside.
- 3In a bowl, place the avocado and chickpeas/white beans and mash well until a paste forms. Season with salt, black pepper and lemon juice to taste. Set aside.
- 4Slice or cut the mushrooms as preferred. Heat a drizzle of olive oil in a pan and add the mushrooms. Season with paprika and stir, cooking until the mushrooms release all their water. Set aside.
- 5Assemble the toast — start with a slice of bread, add 3 tomato slices and season the tomato (optional) with a little salt, black pepper and oregano. Top with half the avocado paste and spread half the mushrooms over it. Finish with a few drops of lemon juice. Repeat and serve.
NOTES
- If you are gluten intolerant, simply use gluten-free bread.
