For the Pita Bread:
- 300 grPlain flour
- 180 mlWater at room temperature
- 6 grSalt
- 20 grOlive oil
- 4 grDry instant yeast
For the Filling:
- 300 grJackfruit (or shredded Pleurotus mushrooms as an alternative)
- 2 leavesLettuce, julienned
- 0.50Carrot, grated
- 1 tbspGarlic powder
- 1 tbspWarm water
- 1 dessert spoonGround cumin
- 2 tbspLemon juice

INGREDIENTS
For the Pita Bread:
- 300 grPlain flour
- 180 mlWater at room temperature

INSTRUCTIONS
For the Pita Bread:
- 1Mix all the ingredients in a bowl.
- 2Knead for about 20 minutes until the dough is smooth and elastic.
- 3Shape into a ball, place back in the bowl, cover with a cloth and leave to rise for about 1 hour, until doubled in size.
- 4Divide the dough into 4 pieces and roll each into a ball.
- 5Flour a surface and rolling pin, then roll each ball into thin, round discs.
- 6Once all the discs are rolled out, place them on parchment paper, cover with a cloth and leave to rest for 30 minutes.
- 7Heat a frying pan over medium-low heat. Cook each disc one at a time for about 30 seconds (or until bubbles appear), then flip and cook for another 30 seconds. Repeat for all discs. Set aside.
For the Filling:
- 1In a bowl, combine the shredded jackfruit (or mushrooms) with all the seasonings and mix well.
- 2Heat a drizzle of olive oil in a frying pan and cook the seasoned jackfruit/mushrooms for 5 minutes, stirring occasionally.
- 3While the filling cooks, prepare the sauce — mix the vegan mayo with a drizzle of sriracha to taste.
- 4Finally, assemble the kebab — spread the sauce on the pita bread, add the carrot, lettuce, jackfruit/mushrooms, and top with crispy onion. Wrap and serve.
- 5You can serve alongside homemade air fryer chips, for example.
NOTES
- You can marinate the jackfruit/mushrooms overnight in the seasonings to intensify the flavour.
