For the Tofu 'Bacon':

- 1 tbspSriracha
- 1 tbspGarlic powder
- 1 tbspGranulated onion
- 3 tbspSoy sauce
- 0.50 tbspSmoked paprika
- Salt to taste
For the Pasta:

For the Mushroom Sauce:

- 2 tbspSesame oil
- 1 tbspSriracha
- 1 tbspGarlic powder
- 1 tbspGranulated onion
- 3 tbspSoy sauce
- 0.50 tbspSmoked paprika

For the Pasta:
- 2 handfulsRocket
- 250 grSpaghetti
- Water as needed
- Salt as needed
INSTRUCTIONS
For the Mushroom Sauce:
- 1Sauté the chopped onion over medium heat until translucent.
- 2Add the minced garlic and sliced mushrooms, stirring occasionally until most of their water has evaporated.
- 3Add the nutritional yeast, soy sauce and mustard, mixing well.
- 4Remove two thirds of the mushrooms from the pan and set aside on a plate.
- 5In the pan with the remaining mushrooms, add the plant-based milk and season with salt, black pepper and nutmeg.
- 6Transfer this mixture to a blender and blend until smooth and creamy. Set aside.
For the Tofu 'Bacon':
- 1Mix the sesame oil, sriracha, garlic powder, granulated onion, soy sauce, smoked paprika and salt.
- 2Cut the tofu into thin strips and coat well in the marinade.
- 3If possible, marinate in the fridge overnight to intensify the flavour.
- 4Preheat the oven to 200°C.
- 5Spread the tofu strips on a parchment-lined baking tray and bake until crispy and golden, about 40 minutes, flipping halfway through.
For the Pasta:
- 1Cook the spaghetti according to the packet instructions in boiling salted water.
- 2Drain and set aside.
- 3Plate the spaghetti.
- 4Pour the creamy mushroom sauce over it.
- 5Add the rocket on top.
- 6Add the reserved whole mushrooms.
- 7Finish with the crispy tofu bacon on top.
