INGREDIENTS
- 200 grSpaghetti
- 4 cupsBlack beans
- 250 grChestnut mushrooms
- 3Ripe tomatoes
- 0.50Bell pepper
- 1Onion

- 0.25 cupWhite wine
- 1 leafBay leaf
- Salt to taste

INSTRUCTIONS
- 1Cook the pasta according to the packet instructions while preparing the rest.
- 2Heat the olive oil in a frying pan.
- 3Once hot, add the chopped onion and bay leaf. Sauté for 1–2 minutes until softened.
- 4Add the minced garlic and chopped pepper and cook for another minute.
- 5Add the sliced mushrooms and cook until they release their water.
- 6Add the diced tomatoes and season with black pepper, salt and oregano.
- 7Pour in the white wine and let it simmer for 1 minute.
- 8Add a splash of water for more sauce and reduce the heat.
- 9Cook for 5 minutes, then add the black beans. Cook for another 5 minutes and serve.
