INGREDIENTS
- 300 grOnion
- 800 grCooked and drained Chickpea
- 800 grBoiling Water
- 200 grSpinach
- 2 c.sopaOlive oil
- Salt q.b.
INSTRUCTIONS
- 1In a large pan, heat the olive oil well and add the roughly chopped onion. Let it sauté until it's soft.
- 2Add the chickpea, boiling water and salt. Stir well and let it cook for 30 minutes.
- 3When everything is well cooked, remove from heat and blend with a hand blender until you get a homogeneous cream.
- 4Return to heat, add the spinach and cook for about 10 minutes, or until the spinach is well cooked.
- 5Adjust the texture as needed, adding more water if you prefer a creamier soup.
- 6Taste and adjust the salt, if necessary.
NOTES
- If you want an even smoother cream, you can pass the soup through a strainer or a powerful blender.
- For an extra touch, you can add a drizzle of olive oil to the plate before serving.
