For the potatoes:

- Salt to taste

For the soya:
- 200 grCoarse textured soy
- 3 leavesBay leaves
- 1Onion, finely chopped
- 3 clovesGarlic, minced
- 3 tbspWorcestershire sauce
- 6 tbspSoy sauce
- 6 tbspWhite wine
- Vinegar to taste
- 2 tbspLemon juice
- 2 tbspGarlic powder
- 1 tspGround cumin
- 1 tspSweet paprika
- Water as needed

INGREDIENTS
For the potatoes:
- 200 grPotato
- Salt to taste
- Oil or olive oil to taste
For the soya:
- 200 grCoarse textured soy
- 3 leavesBay leaves
- 1Onion, finely chopped

INSTRUCTIONS
For the potatoes:
- 1Cut the potatoes into cubes. Fry in a deep fryer or spray with olive oil and cook in the air fryer. Set aside.
For the soya:
- 1Place the soy mince in a pot with water, bay leaves, vinegar and salt. Bring to a boil for 3 minutes. Drain, rinse under cold water and squeeze out as much water as possible. Set aside.
- 2In a bowl, combine all the seasonings with the soy mince. Mix well and leave to marinate for at least 30 minutes (overnight will intensify the flavour even more).
- 3Heat a drizzle of olive oil in a pot and fry the soy until golden.
- 4Serve a portion of potatoes alongside the soya. Finish with olives and pickles (optional) — ready to eat!
