INGREDIENTS
- 140 grFine textured soy
- 300 grMushrooms, finely diced
- 50 grBell pepper
- 50 grOnion

- 10 grOlive oil
- 1 leafBay leaf
- Turmeric to taste
- Black pepper to taste
- Salt to taste
- Cayenne pepper to taste
- Cumin to taste
INSTRUCTIONS
- 1To prepare the soy mince, you can soak it for 30 minutes. If you're short on time, simmer it for 2 minutes in water with lemon juice, bay leaf and salt, then rinse under cold water. Set aside.
- 2Heat olive oil in a frying pan and sauté the chopped onion with the bay leaf until golden.
- 3Add the minced garlic and diced pepper and mushrooms. Cook until all the moisture released by the mushrooms has evaporated.
- 4Season with a little salt.
- 5Transfer the mixture to a bowl.
- 6Drain and squeeze the soy mince to remove as much water as possible. Add it to the mixture and combine everything well with your hands.
- 7Season with turmeric, black pepper, salt, cayenne pepper and cumin. Mix well.
- 8Gradually add the chickpea flour until the mixture holds together enough to shape into balls.
- 9Brush the meatballs lightly with olive oil.
- 10Place the meatballs in a preheated air fryer at 180°C for 15 minutes.
- 11Serve and enjoy.
NOTES
- I recommend using an oil spray to lightly coat the meatballs — this prevents them from absorbing too much oil.
- If you don't have an air fryer, you can pan-fry or bake them in the oven.
- I usually make a tomato sauce or francesinha sauce to dip them in. They're also great served with spaghetti.
