INGREDIENTS
- 500 grSeitan
- 1 kgPotatoes
- 400 grAsparagus
- 4 tbspOlive oil
- 2 tbspGarlic marinade (vinha d'alho)
- 3 clovesLarge garlic
- 2 leavesBay leaves
- 1 tbspTomato passata
- Salt to taste
- Black pepper to taste
- Piri-piri powder to taste
- White wine to taste
INSTRUCTIONS
- 1Slice the seitan as thinly as possible.
- 2Place the sliced seitan in a large bowl.
- 3Add the garlic marinade, minced garlic, crumbled bay leaves, salt, black pepper, piri-piri and tomato passata.
- 4Pour white wine over until it reaches halfway up the seitan. Mix well and shake the bowl to coat everything evenly.
- 5Leave to marinate in the fridge for at least 30 minutes (or ideally overnight).
- 6Preheat the oven to 200°C.
- 7Wash the potatoes well and cut them into cubes.
- 8In a bowl, toss the potatoes with olive oil and salt.
- 9In a large roasting tin, place the seitan slices in the centre and spread the potatoes around them. Drizzle everything with half the marinade sauce, keeping the rest for later.
- 10Roast in the oven for 30 minutes.
- 11Meanwhile, wash the asparagus and cut them into quarters. Set aside.
- 12After 30 minutes, remove the tin from the oven and turn the seitan. Add the asparagus to the tin, mix with the potatoes and drizzle with the remaining marinade.
- 13Return to the oven for another 20 minutes.
- 14Remove from the oven and serve.
