INGREDIENTS
For the Mushrooms:
- 300 grEryngii mushrooms
- 1Small red onion, finely chopped
- 1Red bell pepper, finely diced
- 1 tbspOlive oil

- Fresh parsley to taste
For the Dressing:
- 4.50 tbspOlive oil
- 3 tbspWhite wine vinegar
- 1.50 clovesGarlic, minced or crushed
- Salt to taste
- Black pepper to taste
INSTRUCTIONS
For the Mushrooms:
- 1Cut the eryngii mushrooms into small pieces.
- 2Cook the mushrooms in boiling salted water for about 5 minutes, until slightly tender. Drain and set aside.
- 3Heat the olive oil in a frying pan. Add the chopped onion and red pepper. Sauté until cooked (add a splash of water if needed to reach your desired tenderness).
- 4Season the sauté with garlic powder, salt and piri-piri to taste.
- 5Add the white wine and cook until the alcohol has fully evaporated. Set aside and leave to cool.
For the Dressing:
- 1In a small bowl, mix the olive oil, vinegar, garlic, salt and pepper. Taste and adjust the seasoning.
For Assembling the Salad:
- 1In a large bowl, combine the cooked mushrooms with the cooled sauté.
- 2Add the chopped parsley and pour over the dressing. Mix well to combine all the flavours.
- 3Refrigerate the salad for at least 30 minutes to allow the flavours to intensify.
NOTES
- Serve the salad cold as a starter or side dish.
