INGREDIENTS
- 3Aubergines
- 1 headGarlic
- 1Onion
- 1 tbspTahini
- Lemon juice to taste
- Lemon zest to taste
- Chopped parsley, mint or chives to taste (optional)
- Olive oil to taste
- Salt to taste
- Black pepper to taste
INSTRUCTIONS
- 1Roast the aubergines, garlic head and onion until soft and the skin is lightly charred, giving a smoky flavour.
- 2Scoop out the aubergine flesh and squeeze out the roasted garlic.
- 3In a food processor, combine the aubergine flesh, garlic, onion, tahini, lemon juice and zest, and the seasonings.
- 4Blend until smooth.
- 5Adjust salt and seasoning to taste.
- 6Finish with chopped fresh herbs and a drizzle of olive oil.
