- 2 cupsCooked chickpeas
- Lettuce to taste

- Soy sauce to taste

INGREDIENTS
- 400 grWhite mushrooms
- 6 leavesChinese cabbage (napa cabbage)
- 3Bell peppers
- 200 grPasta (of your choice)
- 2 cupsCooked chickpeas
- Lettuce to taste
- Watercress to taste
- Olive oil to taste
- Salt to taste
- Vinegar to taste
- Ground black pepper to taste
- Dried oregano to taste
- Lemon to taste
- Sesame oil to taste
- Soy sauce to taste
INSTRUCTIONS
- 1Season the mushrooms with lemon juice, oregano, salt and black pepper.
- 2Season the Chinese cabbage leaves with sesame oil and soy sauce.
- 3Grill the mushrooms, Chinese cabbage and bell peppers until well charred and slightly caramelised.
- 4Roughly chop all the grilled ingredients and set aside.
- 5Cook the pasta according to the packet instructions. Drain and leave to cool slightly.
- 6In a large bowl, combine the pasta, chickpeas, lettuce, watercress and grilled ingredients.
- 7Drizzle with olive oil and vinegar. Adjust salt if needed.
- 8Mix well and serve.
