- 1Large Courgette
- 3Large Potatoes
- 0.50Onion
- 30Cherry Tomatoes
- 200 grChickpeas
- Olive Oil to taste
- Sweet Paprika to taste
- Black Pepper to taste

- Salt to taste
INSTRUCTIONS
- 1Preheat the oven or Air Fryer to 200°C.
- 2Peel and cut the potatoes, courgette and onion into cubes. Halve the cherry tomatoes.
- 3Place the chopped vegetables in a large bowl and add the chickpeas.
- 4Add olive oil and spices to taste. Mix well.
- 5Roast for 30 minutes, stirring and checking occasionally as cooking time may vary.
