INGREDIENTS
- 150 mlAquafaba (chickpea cooking water)
- 150 grDark Chocolate (70%)
- Walnuts to taste
INSTRUCTIONS
- 1Whip the aquafaba to stiff peaks (as you would egg whites). It's ready when you can flip the bowl without the contents falling out.
- 2Melt the chocolate in a double boiler.
- 3Once the chocolate has melted, slowly pour it into the bowl with the whipped aquafaba. Gently fold together.
- 4When everything is well combined, divide the mousse into individual cups.
- 5Chop some walnuts and scatter them on top of the mousse.
- 6Refrigerate for a few hours and it will be ready to serve.
NOTES
- For best results, whip the aquafaba very cold and add a little lemon juice — this will help achieve a firmer texture.
- Aquafaba can take between 10 to 15 minutes to whip until stiff peaks form.
- Use the aquafaba immediately after whipping so it doesn't lose its texture.
