INGREDIENTS
For the Rice:
- 200 grLong-grain rice
- 1Courgette
- 1Carrot
- 400 grBoiling water
- Salt to taste
For the Accordion Tofu:
- 3 blocksTofu (200 gr each)
- 1 tbspMiso
- 1 tspSriracha
- 1 tbspDijon mustard
- 1 tbspSoy sauce
- 1 tbspOregano
- 0.50 cupRed wine
- 0.50 tbspSmoked paprika
- 0.50 tbspSweet paprika
- 0.50 tbspGarlic powder
INSTRUCTIONS
For the Rice:
- 1In a saucepan, add the rice, grated courgette, grated carrot and salt. Mix well.
- 2Add the boiling water, stir and place on the heat.
- 3Cook until the rice reaches your preferred texture.
For the Accordion Tofu:
- 1Cut each tofu block in half. Place two chopsticks (or wooden spoon handles) on the counter on either side of the tofu.
- 2Using a knife, make horizontal cuts across the tofu down to the chopsticks, so you don't cut all the way through. Then flip the tofu and make diagonal cuts to create an accordion (fan) effect.
- 3In a bowl, mix the miso, sriracha, Dijon mustard, soy sauce, oregano, red wine, smoked paprika, sweet paprika and garlic powder. Place the tofu in this sauce and marinate for about 20 minutes.
- 4Cook the tofu in a frying pan with a little olive oil until golden on all sides, or alternatively in the air fryer at 180°C for 12 minutes.
